Handwritten on note-cards, tucked away in over-stuffed binders, or scribbled in shorthand on the back of a receipt, family recipes always seem to find a way to reappear despite all the years that have passed.
But for Sandy Maldonado, Manager & Venue Chef, pasta fagioli was a dish that never needed rediscovering. Packed with vegetables and beans, this delicious and hearty soup is a staple for Sandy’s family, enjoyed by generation after generation.
Whether made for yourself on a cozy Sunday, or cooked up for a friend or family member you know needs it most, it’s the perfect soup for the soul.
Keeping it in the Family
Sandy’s earliest memories of cooking take place in her grandmothers’ kitchens. She recalls watching them prepare meals and hosting the family, the way in which they brought everyone together. But it was when she witnessed them cooking over an open fire pit, the way the preparation of a meal could be a performance, and art, in itself, that she knew what she wanted to do with her life. Sandy joined Great Performances over ten years ago part-time to test the waters, but her passion only grew, and she transitioned into a full-time role shortly after the pandemic.
Today, food remains deeply connected to her family and the memories they’ve shared around the table. Pasta fagioli is one dish that holds a particularly special place in her heart. Being her grandfather’s favorite soup, she would often make it for him during the fall and winter months. A recipe from his own childhood, the memories associated with the dish transcended time, bringing comfort to them both whenever prepared. Following her grandfather’s passing earlier this year, preparing the soup has become a meaningful way for Sandy to remember him, and to revisit the cherished moments they shared.
Adaptable to All
The recipe for pasta fagioli is a comforting and classic start, and Sandy’s family can attest it is perfect as is, but should you wish to mix things up, it is also a great base that can be adjusted based on personal preference. Varying the type or amount of vegetables and beans to bulk it up, finishing with diverse garnishes, or serving alongside homemade bread, are all ways to make it your own. Sandy herself likes to top hers off with finely grated parmesan cheese and baby spinach.
Whether you choose to stick to the tried-and-true or let your creativity lead the way, one thing is for certain: you can never go wrong with something that warms the hearts of those you love.
