We draw inspiration from our own Katchkie Farm, from global foodways, and from the regional flavors that shape how people eat now. These influences come together each season as our chefs develop a repertoire of dishes that feel both grounded and forward-looking.

That repertoire becomes a living collection. Clients select and shape their menus from it, while our kitchens continue to refine, adapt, and introduce new ideas over time.

The 60-Acre Difference

Katchkie Farm is a defining part of how we cook.Located in Kinderhook, New York, our 60-acre organic farm supplies up to 30% of our produce during peak season. More importantly, it shapes how we think about food.

Each year begins in the fields, with chefs and farmers planning crops together and aligning menus with the harvest. That connection brings a level of seasonality, consistency, and intention that can’t be replicated through sourcing alone.

It’s not just where ingredients come from. It’s what keeps us grounded.
