There are some recipes that feel less like recipes and more like memories.

For Anastassia Batsoula, Event and General Manager at our partner venue Wave Hill, this easy apple cake is one of those recipes. It’s the kind of dessert her mom would make again and again, simple enough for any occasion but delicious enough to become a family favorite.

It has been a longed-for staple during autumn, making it the perfect thing to bake after a day of apple picking or whenever the chilled weather calls for something warm and homemade.

A Cake Best Shared Around the Table

Some of Anastassia’s favorite memories of this cake aren’t really about the cake at all. They’re about sitting around the table with her family and, somehow, consuming the entire thing in one sitting.

That’s part of what makes this recipe so special. It’s uncomplicated, unfussy, and made for sharing. There’s no elaborate decoration or complicated technique required. Just a handful of ingredients, some apples, plenty of cinnamon, and a little time in the oven. The result is a dessert that feels far more impressive than the effort it takes to make it.

A Simple Recipe with Plenty of Possibilities

Although apples are the classic choice, Anastassia sees this recipe as more of a starting point than a strict formula.

She says it works beautifully with other fruits, too. Peaches make a wonderful summer version, while pears or even mango can bring an entirely different character to the cake. You can also experiment with almond flour or gluten-free flour, making it an especially versatile recipe to keep in your back pocket.

Think of the recipe as a great base, one that can be adapted with different fruits and spices, but doesn’t necessarily need much changing.

But however you make it, the spirit of the recipe remains the same: simple ingredients, seasonal fruit, and something delicious to share around the table.
